Cuvée Carbonic 2025 wine and a celebratory Cuvée PrestigeA carbonic Pinot Noir from the certified organic Palmiet Vineyard, planted on Koue Bokkeveld shale at 1,000 feet. Whole clusters undergo 14 days of native fermentation in sealed one ton fermenters, then age for 12 months in a 25hL concrete egg with full lees. Bottled directly from the egg with a small addition of sulfur, without fining or filtration.
